Description
The best Chardonnay and Bombino grapes are harvested in small boxes to preserve the aromatic profile; after a careful cold maceration each vine is vinified separately at a very low temperature and for a very long time.
The cuvèe is studied on the strong indigenous character of Bombino, which is combined with the aromaticity and mineral sapidity of Chardonnay and varies according to the trend of the vintage.
For the 2013 vintage we have chosen a strong presence of Bombino (70%) and an aromatic accent of Chardonnay (30%); 40 months of aging on the lees followed and 6 months of rest after degorgement.
Combinations
Fresh and clean, with good persistence and an acidic finish, La Vie en d’Or goes well with all kinds of appetizers, but also with the whole meal thanks to the long stay on the lees.
